Crab Meat Omelette
Omelettes have become one of my favourite meals since I started the Dukan diet and I will quite often just cook one up for lunch. As crab meat or seafood cocktail mix is an allowed food on the protein stage of the diet, I often have it in the house just to snack on. So when I thought about adding it to an omelette I was pleasantly surprised as it was just delicious.
Of course you can add just about anything to an omelette so if crab meat isn’t something you like, then try some ham, salmon or anything else that you desire. I will often add some tomato and baby spinach too.
Ingredients:
- 1 full egg
- 1 egg white (or more if you prefer a bigger omelette)
- a handful of crab meat
- mushrooms
- chives
- salt and pepper
Method:
Whisk the eggs until well combined and then some salt, pepper and chives. Lightly spray a fry pan and then pour the mixture into the pan. Sprinkle the crab meat over the omelette mixture.
Cook until browned underneath and almost cooked through, then lift half of the omelette and fold it in half. Continue to cook the omelette until cooked through.
This omelette makes a lovely breakfast if you are on a high protein diet.
