Dukan Bread
Dukan Diet Bread
I have tried three recipes for Dukan bread now and this is the best one so far. This recipe has enough oat bran and wheat bran for five days allowance on the Dukan diet, so I slice the whole loaf up and divide it into five lots. Then I’ll wrap each lot in alfoil and freeze them until I need them.
It is a little heavier than normal bread, but tastes quite nice. If you have any of your own Dukan bread recipes please feel free to add them in the comments section.
If you don’t have wheat germ, you can change the oat bran and wheat bran quantities to 10 tbspn each.
Ingredients
- 8 tbspn oat bran
- 8 tbspn wheat bran
- 4 tbspn wheat germ
- 10 tbspn skim milk powder
- 1 tspn baking powder
- 1 tspn salt
- 2 pkts quick fast yeast (8g per packet)
- 1 tbspn no fat plain yoghurt
- 4 tbspn fromage frais or philidelphia extra light cheese
- 3 eggs
- 4 or 5 tbspn warm water
Method
Use 2 bowls. In the first bowl mix the yeast, water and philidelphia cream cheese and give a good whisk.
Mix all the other ingredients together in a larger bowl.
Add the yeast mixture to the other ingredients and whisk well.
Pour mixture into a loaf tin (I line mine with baking paper) and cook in a hot oven (200 degrees celcius) for 10 minutes. Reduce temperature to 180 degrees and cook for a further 20 minutes.

the dukan diet bread recipe sounds almost unbelievable but i have to wonder if thats for me yet I’m still on cruise and i think that maybee thats up the track a bit is there any comments on my hopes. I’d rather have a slice of this bread instead of the regular galette then theres mushrooms on toast, poached eggs on toast oh wow my gastic juices have gone out of control keith

The Dukan bread is fine to have on Cruise phase. I am still on Cruise phase myself and I eat the bread and am still losing weight.
It isn’t as light as normal bread but it is ok and a good way to get your oat bran. I can’t eat the galette it makes me gag, so the bread and muffins are how I get my daily oat bran intake.
Can this be eaten on the attack phase??
Hi Vicky, I think the wheat bran and wheat germ shouldn’t really be had on attack phase so it’s probably best not to have the bread until you reach cruise phase.

Thanks for posting this recipe, I made it last night it and it worked (I’ve never made bread before ;0})and it has just saved my Cruise phase. How can I store this if I don’t want to freeze it?

Admin, I saw this quote on the daily mail, so it looks like you can have this bread on the Attack phase after day four. Dr. Dukan said, “Constipation may strike after four days on attack so add a tablespoon of wheat bran flakes to your oat bran. But keep drinking.”

Making my second loaf now. The first one was so good. I have a snacking problem at night so I save a quarter for a snack with cream cheese taste like a bagel and quiets the hunger.
I love this Dukan bread, have made some also for my mum who’s Diabetic. The only problem is, mine comes out half the size in height wise and does not look breadlike like in your photo
I have been on the Dukan diet for a while and have lost 12kg. I have been baking the classic Dukan bread and was happy with the taste. What put me off was the fact it never came out the same, always dry as hell and sometimes fell apart. I found your recipe at 2300pm and was so relieved I tried it immediatly and here I am an hour later enjoying a wonderfull slice of bread – with nothing on it and it is soft, tasty, not dry not falling apart – itis wonderfull!! Thank you very much for sharing this with us!
What is sprinkled on the top of the bread? And do you prepare the yeast according to the package instructions first? or is it used dry?

I would love to know the comparison between the dukan bread and a normal wholemeal slice from supermarket? Anyone delved that deep?
Thank you for this recipe. I don’t think I could have done the Dukan diet without it. However, I found it a bit ‘eggy’ so increased the oat and wheat bran to 10 tbsp and the wheat bran to 5.

Not having yogurt, I added sour cream instead! Plus for flavor I added garlic powder and onion powder. Much better!
I made the bread today but changed the recipe a bit, also delicious! I didn’t have wheat bran so I used double the amount of oat bran and then the wheat germ as per the recipe. I have also added dried oregano and a bit of dried garlic and chilli which I also used to put in the galette. Something different that I thought it’s worth sharing!
I love this bread…thank you so much. I toast it and it is great and I make croutons with i,t also. I, also hate the gallette it makes me gag…I now make pancakes with it and it is so much better !
If you don’t have this recipe, it might be worth a try…I really missed pancakes.
4 ounces of ff cream cheese or ff cottage cheese
1 tsp vanilla
1/4 tsp cinnamon
1 tsp of baking powder
3 tsp sugar substitute or to suit taste
2 whole eggs
4 tablespoons of oat bran
Warm cream cheese in microwave for about 30 seconds, until soft. Add remaining ingredients and mix until smooth. Cook like a normal pancake.
I let the mixture sit for a few minutes so they will be fluffy..and I make small pancakes and split them up, so it looks like I have a lot
This makes 2 servings.
This bread looks great! I’m just about to start the Cruise phase, are you allowed to have light cream cheese on this phase? It doesn’t seem so by the book but some people, I’m not sure who’s right.
I have the same problem as Elaine, mine comes out half the size as the one shown in the photo and I find it sticks like a devil no matter what I line the pan with. Still, I love the taste and texture. I’ve started making it in a bread roll tray instead. They come out looking like flattened fairy cakes but it makes 12 of them. Now that I’m in consolidation I like to have one of these with a bit of dijon mustard and a slice of cheddar cheese as a quick and filling afternoon snack to keep the munchies away.
Oh, I forgot to mention… when making in the bread roll tray I reduce the oven temperature to 180*C and bake for 15-20min.
My first batch of durkan bread is in the oven! – many thanks for this simple recipe. I cannot wait for some ‘bread’ the options are endless!

Wow! This is really good bread! Better than the usual bread I make in the breadmaker. Thank you so much for this recipe, it certainly helps to accompany things like boiled eggs and scrambled egg etc. I’m a little worried about putting the weight back on as I’ve only just gone onto the Cruise Phase and even though I’ve only been on the Attack for four days, I feel guilty eating bread!!
Mine turned out lovely by the way but didn’t have much height. Practise makes perfect I guess!
Lost 6lb so far (four days Attack) 2nd day on Cruise.

No I don’t do anything to prepare the yeast, just use it as it is
Honey I haven’t really looked into comparing the bread with supermarket wholemeal, but I guess supermarket bread is made with flour which we are avoiding while on the Dukan Diet. You probably have some preservatives in supermarket bread too.
Beth your version with the sour cream and some garlic powder sounds delicious, I might have to give that a go.

Shelley I have used light cream on Cruise Phase and it certainly didn’t do me any harm. I also used light baby belle cheese and I’ve had people tell me I shouldn’t, but it didn’t seem to do me any harm, I continued to lose weight. I think as long as you don’t go overboard with it then it’s not a problem.
Christine congratulations on the 6lb lost – that’s fantastic. I’m not sure why the bread wouldn’t get much height – mine certainly isn’t as high as bread you would buy from the store, but it’s high enough to make a decent slice. Good luck on Cruise Phase.

Ok, so it’s been a month since I wrote my post on here and I have to say the bread was a god send! Love it and even though I am now on Consolidation I still make the bread!I reached my goal weight quite quickly (after a month) and I have done a week on the Cons.Phase. In total,I managed to lose 13lb and have maintained on my first week of Consolidation!
Oh and practice did make perfect because I used a smaller loaf tin and left it to rise for half an hour before baking.

Thank you so much for this recipie!! I made it last night – I didn’t quite follow the method exactly as I’d measured everything out into one bowl!! Still I left it to prove for about 10 minutes and it made the best ‘diet’ bread I have ever had (and I’ve had a few lol) – I had it this morning for breakfast with extra light laughing cow. I thought I was in heaven!! Can’t wait to try it toasted. My slooooow Cruise is about to become more do-able!!!

I am on the permanent Stabilization Phase. Yay! It is not a diet….it is a way of life. I lost 20 lbs in 2 months. 10 were those ‘last 10 lbs’ that is SO hard to loose. I will never gain them back because I know how to control it. Protein Thursday…..like magic. Thanks to the “Dukan Diet”.

I make this bread every week since I started on Dunkan diet. I am on this diet since Sept 1st, 2011. I lost total of 35 lbs not doing any excercise (have no time for that).
Just made this bread… It tastes fab – like proper bread! Looking forward to trying it as scrambled eggs and toast tomorrow. Thanks.
How many slices do you eat while on cruise after making it
I have made my second loaf and added dried goji berries, its really really nice, the berries go soft like fruit bread, next time I will add some sweetener, as the berries aren’t sweet at all. I also left it to prove for 30 mins and is much nicer than my first loaf, added lots of sesame seeds on top….yum. Its great sliced really thin and toasted, just like a crispbread biscuit. Thanks for the comment left a few days ago. I haven’t been on your web site in a while, I think because I have been on the Stabilization Phase since December and have a lot more freedom with what I can eat. Funnily enough though, I have missed the recipes and reading yours and others comments.
I’m doing very well on the diet and haven’t put on any weight apart from over the Christmas week! I put on 5lb over Xmas but the great thing about this diet is that it dropped straight back off just by doing a Pure Protein day and going back to the Consolidation recommendations the following week!
I think that although the Stabilzation Phase says you can eat how you want, there is the danger of eating unhealthily, but thankfully I think I am more educated about what works and what doesn’t. I find that as long as I only eat starchy food a couple of times a week and the celebration meals twice a week, I maintain my weight and to be honest, I’ve changed my outlook; I don’t want to eat carbs at lunch then carbs at dinner etc!
So for all of you making your way to Stabilizing your weight, there is light at the end of the tunnel because I can vouch that The Dukan Diet does work!

Just wanted to say this is brilliant. I found your recipe at the weekend and made the bread straight away. ok it’s not the best bread in the world but when you haven’t had anything crunchy for 3 weeks a couple of slices toasted is heaven!!!! And a great way of getting your oatbran intake for the day. I had been making the galette but agree that after a while I was really getting sick of them.
I made one loaf and sliced it into 14 small slices then froze in batches of 2 slices per day. Great as I only have to make this once a week! In this quantity would this be enough oatbran for the day? I am in the cruise phase. I also did the sesame seeds on top. And yes it does stick quite a lot used the baking paper as recommended but it stuck to the bottom like glue!!
