Vanilla Moist Cake Muffins
This is a delicious recipe that is not just suitable for the Dukan Diet but is recommended if you are looking for a way to get your daily intake of oat bran. There are quite a few of us who just can’t stand eating oat bran and the usual porridge or galette are just not an option, but these muffins will give you your daily oat bran allowance and they taste great.
You can play around with the flavours and use different flavoured yoghurts for a different flavour muffin. You could also add some cocoa powder to get a chocolate muffin. Just play around with the flavours and enjoy the results.
Ingredients
- 2 tbspn wheat bran
- 4 tbspn oat bran
- 6 tbspn skim milk powder
- 3 egg whites
- 1 whole egg
- 3 tbspn fat free plain yoghurt or quark
- 1 tub fat free vanilla yoghurt (or flavour of your choice)
- 3 tbspn sweetener
- 1 tspn baking powder
- 8 drops vanilla essence
- sprinkle of cinnamon
Method
Mix ingredients together and pour into muffin tins. Bake in moderate oven for 25 minutes or until golden brown.
Enjoy!
These muffins are quick and easy to make and if you like you could do a bigger batch and freeze them. This recipe will give you 6 large muffins and has 2 days worth of oat bran allowance, so make them last 2 days for the Dukan Diet.

what can you use instead of skim milk powder, if you drink soy?

Calorie shifting seems to be the best method for me to lose weight. I never seem to plateau when I use some form of caloric cycling. This is as quick as it gets for me to lose weight.

can u use nonfat milk instead of milk powder? if so, how much milk would i need to use?

What temperature would you cook these on? I need to know in degrees C. I’m a nervous cook at best and these look too delicious to risk messing up! I hope to try them soon.
I admit I was extremely skeptical that these would be good but after reading so many positive comments (and taking stock of my own desperation for something sweet and chewy) I gave them a try last night. They definitely surpassed my exectations, and they smelled like French Toast! My daughter was upstairs and actually came down to check on what I was making because she thought I was “cheating” on my diet! Very good and I will definitely play around with flavours in my next batch (CHOCOLATE!!!). Thanks so much for the great recipe!!!
Have made these twice now. Is such a great recipe. Kellie – I use 170-180 degrees c for up to 25 – 30 minutes.
I’ve used lemon essence instead of vanilla and passionfruit yoghurt instead of plain.
So yummy with a cup of tea.

Dani I don’t see why not as most of the ingredients are protein other than your bran which you need on attack phase too anyway.
so i have had horrible luck with anything baked on the dukan diet. everything is super spongy and sinks. i cant find any recipes i have liked. are these very spongy and heavy as well?

Could you be a bit more specific on the artificial sweetener, there are so many different kinds.

Linda I wasn’t too specific on the sweetener as I am in Australia and I’m guessing brand names may be different overseas.
Personally, I use the most natural type sweetener that I can find.
